Mike and Nancy Kasprzak, trading as The Deer Farm have farmed European fallow deer and fallow/Persian hybrid deer for some 30 years in the Adelaide Hills. Presently we manage around 1000 deer.
Our deer are valued and nurtured as a quality asset and not just another commodity. The best males are retained as breeders based on a strict management plan focused on temperament, body weight, antler – beam diameter and classic fallow heads. Venison is a necessary by-product of our operation, and trading as Birdwood Venison we supply venison to chefs throughout the year.
At 2 years old males are selected for breeding and the remainder (80%) sold as prime, farmed venison. In this way, we optimise body weight, portion size, flavour and tenderness. Chefs familiar with venison regard fine grained fallow venison as being the premium product of the deer industry.

We use various local processors that are accredited and licensed to maintain price efficiency.

We cryovac individual venison for some customers and two to a pack for others. Supply full carcasses for events, sausages in bulk or tray packs, pies as individual purchases. Whole carcasses, cryovac fresh, frozen, paper bags.
