Coopers Brewery has prepared a guide to help match its ales with spices in foods.
The guide is part of Coopers Ale ‘n Spice promotion, which is aimed primarily at the hotel and bar trade, although details are also available on the Coopers website (www.alenspice.com.au).
Coopers National Sales and Marketing Director, Mr Cam Pearce, said the guide has relevance to home chefs and anyone who liked pairing food and beer.
“Unlike lagers, naturally conditioned ales complement spice without extinguishing flavour,” Mr Pearce said.
“Generally, the higher the International Bitterness Unit (IBU) in the Coopers Ale, the more it will
enhance the spices in the food.
“Based on the experience of our expert brewers, there are a few strong connections which people can try.”
- Mild Ale 3.5%. This has an IBU of 21, which is medium to low on the bitterness range. This beer goes well with chicken and fish dishes with lots of cardamom, cumin and turmeric.
- Dark Ale. IBU: 21 (medium to low range). Because of its dark malt characteristics, this product works well with smoky, barbeque meats.
- Coopers Original Pale Ale. IBU: 24 (mid range). This is perfect for enhancing heat
without being too hot.
- Sparkling Ale. IBU: 30 (Medium to high range). Because this would give a hot dish a real kick, it is suggested this accompany mild, Asian inspires dishes full of ginger and garlic.
- Coopers Stout. IBU: 40 (High range). This works beautifully with sweet desserts full of apple and cinnamon.
Mr Pearce said there were no right or wrong answers when it came to matching food and beer, but the suggested links provided a base from which people could start.
